Wine School: Rosé All Day
Wine School: Rosé All Day!
From a pale, onion-skin orange to a shade of vivid, near-purple, Rosé is an ever-evolving canvas of colors, aromas, and flavors. While the exact date of the first wine labeled as a rosé is unknown, it is likely that most of the earliest red wines produced were closer in appearance to today’s rosés than to modern red wines, making this possibly one of the oldest known types of wine. Because many of the winemaking techniques used to make today’s darker, more tannic red wines were not widely practised in ancient winemaking. Both red and white grapes were often pressed soon after the harvest by hand, feet, or even a sackcloth, creating juice that was only lightly pigmented. Even after newer and more efficient methods were developed, many ancient and early winemakers still preferred making the lighter colored and fruitier style of wines.
Rosé wines can be made still, semi-sparkling, or sparkling, and with a wide range of sweetness levels from highly dry Provençal rosé to sweet White Zinfandels and blushes. They are made from a wide variety of grapes and can be found around the globe.
In this class, we’ll take the time to learn how rosé is made today and how it achieves the various shades of pink through the saignée method, while also enjoying various styles of rosé, from the pale pinks created by direct press to the bubbly rosé created from blending grapes. Join us as we dive into the history of and creation of one of the oldest types of wine!

Wine School: The Many Faces of Chardonnay
Wine School: The Many Faces of Chardonnay
Celebrated for its versatility, from crisp and unoaked to buttery and oak-aged, Chardonnay is the world’s most popular white wine with over 494,000 acres (200,000 hectares) planted worldwide. With its remarkable adaptability, this grape is considered a “blank canvas” by winemakers, and is a work of art to create as every aspect of the winemaking process can affect the individual flavor profiles, lending itself to almost any style of wine making from dry stills, to sparkling, to sweet late harvest wines.
Chardonnay originated from Burgundy, France, where styles can vary from rich, oaked expressions in Meursault to lean, mineral-driven Chablis. However, Chardonnay has a global reach and is widely planted in California, Australia, Chile, and New Zealand. For new and developing wine regions, growing Chardonnay can be seen as a ‘rite of passage’ and an easy entry into international wine making. It is vinified in many different styles, from the lean, crispy mineral wines of Chablis, France, to New World wines with oak and tropical fruit flavors.
Making Chardonnay involves harvesting, pressing grapes, settling the juice, and then fermenting, and this is where the key decisions are made. Join us as we try various Chardonnays and discuss why this grape has the reputation of being one of the greatest wines in the world.

Wine School: Cru-sing Through Beaujolais
With Burgundy to the North, the Saone River to the East, Lyon to the South, the Monts du Beaujolais to the West, Beaujolais is a hilly vineyard tucked away and stretching over 55 kilometers from North to South. In this class, we’re going to be exploring this idyllic and history-rich vineyard that grows Chardonnay and Gamay varieties, producing delicious red, rosé, and white wines.
Beaujolais has a history as far back as the 10th century, when the first lord of Beaujeu and his wife donated a plot of vines. However, wine production didn’t really take off until the 17th century. Beaujolais then became the leading supplier of Lyon’s famous ‘bouchons’ and taverns, and wine served in ‘pots’ became the centerpiece of every table.
Planted since the early 17th century, the Gamay variety and the Beaujolais vineyard share a common history. The area has proven to be the perfect setting for the variety to develop all its finesse and diverse expression. Although granite soils seem to be its soil of choice, the variety is good at adapting. Nowadays, half of the 30,000 hectares of Gamay planted worldwide are in the Beaujolais region, where it covers 98% of the areas that produce Beaujolais wine.
While Gamay is the dominant grape in the vineyard, white wine is actually one of the region’s little-known gems. On Beaujolais terroirs, Chardonnay grapes reveal lovely expressions. The variety grows in the far north of the vineyard, bordering on the Macon region and to the southwest of Villefranche-sur-Saone. Chardonnay now accounts for 2% of the vineyard.

April Book + Bottle: Sunday, April 26th
We’re excited for our partnership with our friends at Norwich Bookstore! Each month, Book + a Bottle brings together both familiar and new faces for lively conversation, thoughtful reads, and wines chosen to complement the story just as much as the discussion.
In April, we’ll be reading Olga Dies Dreaming by Xochitl Gonzalez. This vibrant, high-energy debut follows a high-end wedding planner and her brother—a popular congressman—as they navigate their ambitions, family secrets, and the political fallout of Hurricane Maria in Puerto Rico. Both a sharp social critique and a deeply moving family drama, it’s a story about the "American Dream," identity, and the ghosts of our past that we can’t quite outrun.
To pair with the book, we’ve chosen the Frida Kahlo Red Blend from Chile’s renowned Colchagua Valley. Much like the novel’s protagonist, this wine is bold and expressive, offering rich layers of ripe berries, cocoa, and subtle earthy notes. Inspired by the legacy of an icon, this red blend is spirited and complex, providing the perfect accompaniment to the book’s themes of resilience and self-discovery.
Your Book + a Bottle pre-order includes:
A copy of the book
One curated bottle of wine
An invitation to our guided group discussion

Wine School: Pinot Noir Around the World
Wine School: Pinot Noir Around the World
With flavors ranging from cranberries to black cherries, pinot noir has fantastic variation.
As a grape, pinot noir is more delicate than cabernet sauvignon. It has a pale color in the glass and zesty acidity. With thin black-skinned grapes in tightly wound bunches, it can struggle to gather sunlight in the valleys where it grows best. Of all the wine-growing regions of the world, pinot noir prefers areas with a long spring and fall. One of the major factors that affects the taste of wine is aging it in oak. Long aging in oak adds richness, tannin, and vanilla aromas, whereas less oak aging lets the bright cherry flavors of pinot noir show through.
The region affects Pinot Noir perhaps more than any other grape. From France, pinot noir can be rustic, earthy, and acidic. From Sonoma, it’s going to be lush with rich black cherry flavors and higher in alcohol than its French counterpart. In this class, we’re going to look into Pinot Noirs from Oregon, Burgundy, New Zealand, & California. Come travel with us on an educational and delicious journey through these regions-no passport required.

Wine School: California Dreaming
California wine production has a rich viticulture history dating back to 1680, when Spanish Jesuit missionaries planted Vitis vinifera vines native to the Mediterranean region in their established missions to produce wine for religious services. In the 1770s, Spanish missionaries continued the practice under the direction of Father Junipero Serra, who planted California’s first vineyard at Mission San Juan Capistrano.
After Prohibition, California saw a steady growth in wine production. At the time, California was mostly known for its sweet, port-style, and jug wine productions. California wines quickly gained international prominence at the Paris Wine Tasting of 1976, when renowned French oenophiles, in a blind tasting, ranked the California wines higher than the premier French labels in the Chardonnay and Cabernet Sauvignon categories. With more than 4,200 wineries ranging from home-grown and small boutiques to large corporations with international distributions, California produces about ninety percent of the American wine supply and is the fourth largest wine producer among the world’s independent nations.

Instructor Bio: Victoria Tuzet
Originally from Montréal, Canada, Victoria recently relocated to the Upper Valley after several years in Southern California. A passionate traveler with a deep curiosity for wine, she plans her adventures around the world’s most celebrated wine regions whenever possible. Her wine travels have taken her through Napa and Sonoma in California; Bordeaux, the Loire Valley, Champagne, Provence, and Alsace in France; Valpolicella and the tiny towns of Tuscany in Italy; Spain’s Rioja and Cava regions; Portugal’s Douro and Porto; and even the volcanic vineyards of the Canary Islands.
Victoria spent four months living in Spain, immersing herself in the local wine culture, and later worked the 2022 harvest in France’s Rhône Valley, assisting with winemaking at an organic and biodynamic estate. She holds her WSET Level 3 Award in Wine and is currently completing the WSET Diploma, with expected graduation in 2026. When she’s not talking terroir or vintages, you’ll likely find her watching documentaries, attempting to bake, or crafting between tastings.

Wine School: Sun-Soaked South of France: Provence, Languedoc, & Roussillon
Hugging the gorgeous Mediterranean between Spain and Italy, France’s southern coastline produces delicious wines suited for summer revelry. When you look at the sun-drenched vineyards and read about the diverse terroirs and the history of their winemaking, it’s no wonder the wines produced here are captivating the world.
The South of France is known for its consistently fine growing conditions. Even though it’s the South of France, the region is still far north enough that almost all of Spain and Italy’s vineyards have long days during the growing season, guaranteeing that the grapes ripen fully. With the Gulf Stream and Mediterranean Sea keeping it balmy and steady winds banishing humidity that can cause disease, its growing conditions couldn’t be more perfect.
In the South of France, winemakers rely on both modern technology and age-old techniques to decide the best moment to pick their grapes. The careful timing ensures that the fruit has the right balance of sugar, acidity, and flavor-this lays the foundation for excellence.

Wine School: Pinot Gris & Pinot Grigio: A Grape Debate
We know what you’re thinking, aren’t they the same wine? Yes, and no. While these two are made from the same grape, production is different. Believed to have been cultivated as early as the 13th century, the Pinot Gris grape originated in the region of Burgundy France as a mutation of Pinot Noir, and was later perfected by winemakers in Alsace. Over time, Pinot Gris spread across Europe, and its name changed as it took root in different regions, like in Italy, where the grape, adapting to the climate and winemaking traditions, became known as Pinot Grigio.
The differences between these two are their taste and aroma, their body and texture, their production methods, regional variations, as well as the foods that they pair well with. Despite that, they also share key similarities, like how they are from the same grape, they both usually look alike, they are both adaptable when it comes to food pairings, a refreshing zing of acidity, and they are both very popular and a favorite of many worldwide. Want to know more and taste their differences and similarities side by side? Join us as we compare, contrast and settle the grape debate between Pinot Gris & Pinot Grigio.

Wine School: Rolling Through the Rhône
A captivating wine region that effortlessly weaves together a stunning blend of nature, history, and vinicultural prowess. Traveling along the Rhône River, this region bears a range of wines that show off the area's terroir and its winemaking heritage that dates back centuries, resulting in every bottle telling a story of soil, climate, and the passion that winemakers pour into their craft.
The Rhône is usually divided into two sub-regions with distinct vinicultural traditions, the Northern Rhône and the Southern Rhône. The northern sub-region produces red wines from the Syrah grape, sometimes blended with up to 20% of white wine grapes and white wines from Marsanne, Roussanne, and Viognier grapes. The southern sub-region produces an array of red, white, and rosé wines, and often blends of several grapes such as Châteauneuf-du-Pape.
The entire Rhône region produces around 4 million hl of wine each year, of which over half is classified under the Côte du Rhône and Côte du Rhône-Villages appellations. The prestigious Northern Rhône appellations account for less than 5% of the total Rhône wine production. Join us as we sip, savor, and travel through a wine lover’s paradise.

March Book + Bottle: Sunday, March 29th
We’re excited for our partnership with our friends at Norwich Bookstore! Each month, Book + a Bottle brings together both familiar and new faces for lively conversation, thoughtful reads, and wines chosen to complement the story just as much as the discussion.
In March, we’ll be reading The Verifiers by Jane Pek. This clever, genre-blending novel mixes mystery, tech culture, and sharp social insight as it follows a young woman working for a detective agency that investigates online identities. Witty and twisty, it explores belonging, reinvention, and who we really are—on and offline—giving us plenty to discuss.
To pair with the book, we’ve chosen Belposto Montepulciano d’Abruzzo. Smooth and fruit-forward, this Italian red offers notes of dark cherry and plum with a touch of spice and soft tannins, making it an easy, crowd-pleasing sip.
Your Book + a Bottle pre-order includes:
A copy of the book
One curated bottle of wine
An invitation to our guided group discussion
Choose from three discussion dates:
Tuesday, March 24th, or Thursday, March 26th, from 6:30–7:30 PM
or Sunday, March 29th from 4:30–5:30 PM
Please be sure to select your date at checkout.
Pick-up details:
Orders will be available for pick-up beginning February 15th, and you’ll receive an email as soon as your bundle is ready. Please note that orders will be held for two weeks from the pick-up start date. After that, unclaimed orders may be forfeited.
Space is limited, and discussion attendance is reserved exclusively for those who have purchased Book + a Bottle. As a little perk, let our bartenders know you’re part of the group during the meetup to enjoy 10% off your bar tab.
We can’t wait to read, sip, and discuss with you- see you there! 📚🍷

When she’s not talking terroir or vintages, you’ll likely find her watching documentaries, attempting to bake, or crafting between tastings.
